Tailgate Recipes
In this section, the top recipe is provided by Fricker66, who is a frequent poster on our board and an all-around good sport. Although he’s married and fiercely devoted to his wife and kids, we tease him for being gay because he’s an outstanding cook (he has his own catering business) and he looks like Martina Navritalova, who’s both female and gay.
The bottom recipe will be provided by us, the FAI writers.

Ginger-honey shrimp
A great game-day recipe, because these spicy little fockers can be prepared either on the grill at the tailgater or in the skillet the night before or morning of the game.
2 pounds extra large (16-20/lb) peeled, deveined shrimp
1/2 cup olive oil
1/2 cup honey
1 tbsp sugar
1 tbsp McCormick's cajun seasoning
1 tbsp minced fresh ginger
1 tbsp minced fresh garlic
2 tbsp soy sauce
Sesame seeds
Combine shrimp, oil, honey, cajun seasoning, sugar, ginger and garlic in a container with a tight fit lid (Tupperware or Rubbermaid). Shake so that shrimp are covered evenly with spices, and refrigerate 2-12 hours, occasionally shaking to re-cover shrimp. Remove shrimp/marinade from fridge/cooler (if at game) 10-20 minutes before cooking.
If using grill at game, coat shrimp with marinade, drizzle with a touch of soy sauce and grill shrimp until cooked through, about 2-3 minutes per side. Sprinkle with sesame seeds.
If using a pan at home, heat pan over high heat. Add shrimp (no need to add oil as it is already in marinade), and cook 2-3 minutes per side. Sprinkle with soy sauce during last minute of cooking -- soy will evaporate and thicken with marinade. Remove shrimp from pan and sprinkle with sesame seeds. Refrigerate and serve cool during pre-game tailgate. |
