Tailgate Recipes

In this section, the top recipe is provided by Fricker66, who is a frequent poster on our board and an all-around good sport. Although he’s married and fiercely devoted to his wife and kids, we tease him for being gay because he’s an outstanding cook (he has his own catering business) and he looks like Martina Navritalova, who’s both female and gay.

The bottom recipe will be provided by us, the FAI writers.

So without delay, here’s the latest installation of Tailgate Recipes:

Fricker’s nancified recipe:

Grilled cajun chicken with peach and corn salsa

Great for an early season game when the weather is still warm, the peach salsa adds outstanding flavor to your normally-boring grilled chicken.

12 boneless breasts of chicken
2 limes
1 tbsp olive oil
Healthy dose of McCormicks Cajun seasoning
1 tbsp sea salt
1 tbsp fresh cracked pepper
Large Ziploc freezer bags

Kernels cut from 6 ears of sweet summer corn
5 fresh peaches, peeled & cubed (nectarines can be substituted)
1 large sweet onion, chopped
1 red bell pepper, diced
1 bunch fresh basil, sliced (chiffanade)
2 tbsp butter
1 tsp sugar
Ground pepper to taste

Pound chicken breasts until about 1/2 inch thick, and place on work surface. Sprinkle with healthy dose of cajun seasoning, salt and pepper and put in freezer bag. Add lime juice and olive oil, place in refrigerator to marinate for 1-3 hours.

In a large skillet over medium high heat, add butter, onion and corn and saute until onion is translucent, about 7 minutes. Add peaches and red bell pepper and saute an additional 2 to 3 minutes. Remove from heat. Stir in basil and sugar, add pepper and allow mixture to cool.

Grill chicken. Serve with corn/peach salsa over top.

Chili Dog

It's a hot dog, and it's got chili on it!

1 package hot dogs, thawed
1 can hot dog chili
1 package hot dog buns

Puncture hot dogs, throw in microwave on high until hot dogs are bulbous. Remove from microwave. Pour hot dog chili into a microwave safe bowl and microwave on high until chili starts to explode all over interior of microwave. Remove. Stir.

Place hot dogs in buns. Spoon chili onto hot dogs. (1) 8 pack of hot dogs will serve 2.
